Chicken Pot Pie

Now keep in mind, I don't have mad skilz in the kitchen, and I never measure anything. With that being said, here is the "recipe":

  • Cooked Chicken cut into bite-sized pieces (I just buy a pack of chicken breasts and boil them up)
  • 2 Deep Dish Pie Crusts
  • 1 can of Cream of Chicken soup
  • 1 can of Cream of Potato soup
  • a cup or so of frozen vegetables, your choice
  • butter
Preheat the oven to 450 degrees, and (after poking holes in the bottom of the crust), bake one pie crust for 7-8 minutes or until brown.

Mix together the cooked chicken, soup, and veggies, and pour into the browned crust.

Dollop some butter in a couple of places on top of the mixture. (you can leave this out, but I think this is what made my last go 'round so good...I never did this before last night)

Invert the other crust and lay on top of the mixture, crimping the edges.

Turn the oven down to 350 degrees, and bake for about 25-30 minutes, or until it gets brown enough for you.

What's cool about this is that you can put ANYTHING in there that you want. My mom used to put a can of Veg-All in hers, but I prefer just buying a pack of frozen peas/carrots. She also sometimes puts in a couple of chopped up boiled eggs. It's up to you! And of course, you can make your own pie crust if you want, but who the hell wants to do that??
